YaYa’s Gluten Free Spinach Quiche

6 organic eggs
1 cup organic half and half creamer
2 cups veganaise
2 cups organic cheese (shredded cheddar)
3 tsp. organic green onion (chopped)
2 tsp. organic dill
2 tsp. organic mint
¼ bag organic spinach (frozen)
9-inch gluten free pie crust
Beat the eggs. Then add the half & half and the veganaise. Cook the spinach (boil until tender (approximately 10-15 mins.), squeeze liquid from the spinach. Add to the egg mixture. Add the dill, mint, and green onions. In the egg mixture, add ½ of the cheese and mix. Put the mixture into the pie crust and top it with the rest of the cheese. Bake for 45 mins. in 350 degrees until crust becomes golden. Let it cool, then cut and serve!
