Jalapeño Bison Burgers

Burger Ingredients:
2.5 pounds grass-fed bison
¼ cup organic lime juice
4 teaspoons dried organic oregano
4 teaspoons organic cumin powder
2 teaspoons pink Himalayan salt
1 teaspoon organic black pepper

Chimichurri Ingredients:
2 bunches of organic cilantro
½ bunch organic parsley
4 teaspoons organic minced garlic
¼ cup organic olive oil
1 teaspoon pink Himalayan salt
1 teaspoon organic red chili flakes
3 organic jalapeños, sliced

Mix the first six ingredients for the burgers. Form the burgers into 6 patties. Grill on each side just long enough for the dark grill lines to appear (about 3 minutes on each side). Remove from the grill and bake on a small cookie sheet on the bottom rack of the oven until internal temperature of 155°. Transfer burgers to a plate or another sheet after 5 minutes to avoid coagulation of fat on the bottom of the burger.

Mix the next six ingredients for the chimichurri in a food processor.

Top the burgers with chimichurri and 3 slices of jalapeno and enjoy!
